BREAD SALT RISING | |
3 med. potatoes 4 c. boiling water 1 tsp. sugar 3 tbsp. cornmeal 1 tsp. salt 2 c. lukewarm milk 2 tbsp. melted shortening 1/8 tsp. baking soda 1/8 tsp. salt 1 c. water Pare and slice potatoes. Add cornmeal, sugar, salt and boiling water. Wrap bowl in heavy cloth, cover. Allow to stand in warm place overnight. In the morning, remove potatoes and add milk, shortening, soda, salt, and water. Add flour until dough is stiff enough to knead. Knead until smooth and elastic. Form in loaves in oiled pan. Cover and let rise until dough in bulk. Bake in moderate oven at 400 degrees for 45 minutes. |
