SALT RISN' BREAD 
RISIN:

3 med. potatoes, sliced
2 tbsp. cornmeal
2 tbsp. flour
2 tbsp. sugar
Pinch of soda
2 1/2 c. boiling water

BREAD:

1 qt. warm milk
5 tbsp. sugar
Pinch of soda
1 tbsp. salt
3 tbsp. Crisco
10 c. flour

In quart jars with lids, add potatoes, 2 tablespoons meal, 2 tablespoons flour, 2 tablespoons sugar and soda mix. Add water, stir. Place in a warm space (100 to 115 degrees) wrapped in a towel until foam forms, about 10-12 hours.

Pour this liquid into bowl with 1 quart of warm milk, 2 tablespoons sugar, soda and 5 cups flour to make a pancake mixture. Let rise until double in warm place until foamy, 1 hour.

Add 3 tablespoons sugar, 1 tablespoon salt, 3 tablespoons Crisco, 5 cups flour until medium stiff dough forms. Knead 5-10 minutes. Rest dough. Place in pans and let rise until doubled. Bake at 375 degrees for 10 minutes, 350 degrees for 10 minutes. Makes 4 loaves.
