SALT RISING BREAD | |
YEAST: This is the way yeast was made years ago, before you could buy it. 2 med. sliced potatoes, peeled 2 tbsp. white cornmeal (can be omitted) 2 tbsp. sugar 1/8 tsp. baking soda Put in quart jar. Add 2 cups boiling water. Don't screw cap on tight. Set in warm place 20 hours until foam forms. There should be 1-inch foam on top and a noticeable odor. BREAD: 1 qt. milk, scalded 2 tbsp. sugar 1/4 tsp. baking soda 1 c. liquid yeast (from jar) Scald milk. Add sugar and soda. Cool to lukewarm. Add liquid yeast. Add flour to make a medium dough. When double in bulk, add 1 tablespoon sugar and 1/2 cup melted fat. Knead well and put in pans. Brush with melted butter. Let rise about 3 hours until double. Bake 1 hour at 350 degrees. |
