ROSH HASHANAH HONEY CAKE 
3 1/4 c. sifted all-purpose flour
1 tsp. baking soda
1/2 tsp. ginger
1/2 tsp. salt
6 oz. can frozen orange juice
1/2 c. vegetable oil
4 eggs
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. allspice
1 c. honey
1 c. chopped nuts
1/3 c. brewed coffee
3/4 c. sugar

Grease and line two 9x5x3 inch loaf pans with wax paper. Sift together flour, baking powder and soda, cinnamon, ginger, allspice and salt. In a small bowl combine honey, orange juice, oil and coffee.

In a large mixer bowl beat eggs and sugar until fluffy. Add sifted dry ingredients alternating with orange juice mix. Fold in nuts. Bake at 350 degrees for 15 minutes then at 325 degrees for 45 minutes until done by cake tester inserted in center.
