COCOA COOKIES 
1/4 c. cocoa
2 c. cake flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening
3/4 c. sugar (I use 1 c. sugar)
1 egg, unbeaten
1/2 tsp. vanilla

Sift cocoa, flour, baking powder and salt together. Combine shortening, sugar and egg. Beat well. Add sifted dry ingredients gradually, mixing well after each addition. (Mixture will seem dry.) Shape into a roll 2 inches in diameter. Wrap in waxed paper. Chill in refrigerator overnight. When ready to bake, cut thin slices from roll. Bake on ungreased cookie sheet in moderate oven, 350 degrees about 10 minutes. Makes about 6 dozen cookies.
