BAKED STUFFED POTATOES 
6 baked potatoes
2 tbsp. butter, melted
1/4 c. sour cream, cottage cheese or yogurt
1 tbsp. chopped chives and/or parsley
1 tsp. salt
1/4 c. hot milk
3-4 tbsp. chopped onion
3/4 to 1 c. shredded sharp Cheddar cheese

Cut baked potatoes in half lengthwise. Scoop out the insides and mash. Mix with all the above ingredients, and beat well. Return to the shells, sprinkle the tops with paprika. Reheat for about 15 minutes at 350 degrees.
