BAKED BUTTER BEANS WITH SMOKED
SAUSAGE
 
4 cans butter beans
1 lb. smoked beef sausage
1/2 to 2/3 c. ketchup
1 to 1 1/4 c. dark brown sugar

Pour the beans into 2 1/2 quart casserole. Cut beef sausage into slices, put into a pot and cover with cold water. Bring this mixture to a boil; cook about 3 minutes; drain into colander and rinse. Add sausage slices to beans. Add ketchup and dark brown sugar to taste. Bake covered at 350 degrees for about 2 hours.

Remove beans from oven and let them sit a while before serving. Beans will start to absorb liquid. If it looks like there is too much liquid, spoon some into a cup and save. If the beans get too dry after sitting, just add the saved liquid to them.
