SLIMMED DOWN LINDY CHEESECAKE 
1 tbsp. butter
1/2 c. graham cracker crumbs
3 (8 oz.) pkgs. Neufchatel cheese, softened
1/3 c. sugar
Sugar substitute to equal 6 tbsp. sugar
1 1/2 tbsp. flour
3/4 tsp. grated orange rind
1 tsp. vanilla
3 eggs
1 egg yolk
2 tbsp. liquid skim milk

Butter bottom and side of 8-inch spring form pan. Sprinkle with graham cracker crumbs; press firmly into place. Refrigerate 1 hour.

Place cheese, sugar, sugar substitute, flour, orange rind, vanilla, eggs, egg yolks, and milk in container of electric blender. Whirl 2 minutes or until mixture is the consistency of heavy cream. Spoon carefully into prepared pan.

Bake in very slow oven (250 degrees) for 1 hour 10 minutes. Turn oven off; open door and allow cheesecake to cool gradually. Refrigerate 4 hours before serving. Yield: 12 servings at 224 calories each.
