LOW CAL CHEESECAKE | |
2 env. unflavored gelatin 1 c. skim milk 4 eggs, separated Artificial sweetener equal to 1 c. sugar 1/4 tsp. salt 2 tsp. grated lemon rind 1 1/2 tbsp. lemon juice 1 1/2 tsp. vanilla 1/2 tsp. almond extract 1 1/3 c. cottage cheese 1/2 tsp. cream of tartar 1 tbsp. grated lemon rind for garnish 1 tbsp. grated orange rind for garnish Sprinkle gelatin over milk to soften. Add egg yolks and blend. Stir over low heat until gelatin dissolves and mixture thickens slightly. DO NOT BOIL. Remove pan from heat. Add sweetener, salt, 2 teaspoons lemon rind, juice and flavoring extracts. Force cottage cheese through a sieve or whirl very smooth. Add to gelatin mixture. Cool, stirring occasionally, until mixture is on the point of setting. Beat egg whites with cream of tartar until stiff. Fold into the cheese mixture. Spoon into a 9-inch springform pan. Sprinkle top with mixed lemon and orange rind. Chill cake until firmly set. To serve: Remove sides of pan. Serves 4-6. |
