SALMON QUICHE | |
1 (8-9 inch) quiche pastry, unbaked 1 lg. can best red salmon 3 lg. eggs 1 1/2 c. carrots, shredded 1/4 c. sliced green onions 1 c. sm. curd cottage cheese 1 tsp. Dijon mustard 3/4 tsp. salt 1/2 c. cream 1 sm. (4 oz.) can mushrooms Parsley for garnish 1. Preheat oven to 375 degrees. 2. Partially bake pie shell on lower rack of oven for 10 minutes. 3. Drain the salmon reserving 2 tablespoons liquid. 4. Break the salmon into chunks. 5. Beat eggs with cottage cheese, mustard and salt. |
