SALMON QUICHE 
1 can (15 1/2 oz.) salmon, drained & flaked
1 c. shredded Swiss cheese
1 med. onion, chopped, about 1/2 c.
2 tbsp. flour
4 eggs
1 c. milk
3/4 tsp. salt
1/8 tsp. hot sauce

Mix salmon, cheese, onion and flour. Spread in greased quiche pan. Beat eggs slightly, beat in remaining ingredients. Pour mixture over salmon mixture. Bake uncovered at 350 degrees about 35-40 minutes until knife inserted in center comes out clean. Let stand 10 minutes before cutting.
