CHICKEN BROCCOLI CASSEROLE 
4-6 chicken breasts, cooked & cut in pieces or 1-2 c. leftover chicken
1 pkg. chicken Rice-a-Roni
1 c. grated Cheddar cheese
1 lg. bag frozen broccoli

TOPPING:

2 cans cream of chicken soup
1/2 c. mayonnaise
2 tsp. lemon juice

Prepare Rice-a-Roni as directed on package. Cook and drain 1 bag frozen broccoli. In bottom of large casserole dish layer Rice-a-Roni, broccoli, chicken and then the cheese. Top with topping mixture.

Bake at 350 degrees for 40-60 minutes until bubbly and heated through. Last 10 minutes top with crumbled cracker crumbs or 1 small can dried onion rings. Variations: Can use cooked turkey or ham in place of chicken.
