SPAGHETTI WITH RICOTTA AND
WALNUT SAUCE
 
2 cloves garlic
1 c. walnuts
1 tbsp. snipped parsley
1 tbsp. chopped fresh basil or mint
1 lb. Ricotta cheese
1 c. grated Parmesan cheese
1 tsp. salt
1/4 tsp. pepper
3/4 lb. spaghetti
Pinch of red pepper (optional)

Put garlic, walnuts and herbs in blender, whirl until creamy. Turn out into bowl with remaining ingredients, mix thoroughly, set aside. Cook and drain spaghetti, add while hot to bowl mixture. Toss until pasta is well coated with sauce. Garnish with snipped parsley and a few chopped walnuts.
