BROCCOLI CASSEROLE 
1 pkg. (10 oz.) frozen chopped broccoli or 1 bunch fresh broccoli steamed and chopped
1/2 c. precooked (or leftover) rice
1 med. onion, chopped
1/2 stick butter, only
1 can cream of mushroom soup
1/2 c. milk (whole not 1/2%)
Salt an pepper a dash of each
Melted Velveeta cheese (3/4 to 1 c.)

Saute onions in butter in skillet, add to casserole. Take cooked broccoli and add rice to casserole dish. Mix in milk and soup. Pour into greased baking dish. Pour Velveeta cheese on top. Bake in preheated oven 350 degrees for 30 to 40 minutes until cheese browns. Makes 13 x 9 pan full.
