BROCCOLI RICE CASSEROLE 
1 med. onion, chopped
1 tbsp. butter
1 can cream of mushroom soup
1/2 c. milk
1/2 lb. Velveeta cheese
3 c. cooked rice
2 (10 oz.) pkgs. frozen chopped broccoli
Grated cheese

Heat onions, butter, soup, milk and cheese until cheese melts. Fold in rice and broccoli (thawed enough so it can be broken up). Put in a 9x12 greased casserole. Top with grated cheese. Bake 30 minutes at 350 degrees.
