BROCCOLI & CHEESE CASSEROLE 
1 stick butter
1 lg. onion, chopped
1/2 lb. Velveeta cheese
1 can cream of chicken soup
1/2 can evaporated milk
1/2-1 c. Minute Rice
2 pkgs. frozen chopped broccoli, thawed

Saute butter and onion. Combine first five ingredients in saucepan melting cheese to make cream sauce. Add Minute Rice and frozen broccoli. Bake in a greased casserole dish for 40 to 50 minutes at 350 degrees. Stir two times.
