BROCCOLI AND CHEESE CASSEROLE 
1 bag broccoli cuts
1 (8 oz.) bar of Velveeta cheese
1 c. Minute rice
1 can cream of mushroom soup
1 c. water

In a saucepan, combine the water, soup and cheese, stir until smooth. Put broccoli cuts in a casserole dish. Add Minute rice to the saucepan mixture and pour over the broccoli cuts. Cover with foil and bake for 45 minutes, uncover until golden brown (if desired top with croutons and bake a little longer).
