BROCCOLI CASSEROLE 
1/2 c. chopped celery
1/2 c. chopped onion
1/2 stick butter
2 c. cooked rice
1 pkg. frozen broccoli pieces, cooked
1 c. mushroom soup
1 sm. jar Cheez Whiz or 1/2 lb. Velveeta cheese
Salt and pepper to taste

Melt butter in saucepan. Cook celery and onions until tender. Cook broccoli, drain well. Cook rice in water until done, drain well.

Mix all ingredients. Season with salt and pepper. Cut cheese in small chunks and stir in.

Stir in mushroom soup. Pour into buttered casserole dish. Bake at 325 degrees for 30 minutes.

Success Rice works well - it comes in 2 cup packets that you just cook in water for 10 minutes.
