APPLE-CHICKEN CASSEROLE 
3 unpeeled tart apples, chopped
1/2 c. yogurt
1 lg. chicken breast, skinned and split
1 orange

Place apples in the bottom of a lightly oiled casserole dish, pour yogurt over them and stir lightly to combine. Place the chicken breast halves over the apple-yogurt mixture. Cut unpeeled orange into thin slices and place over the chicken to keep it from drying out. Bake in a preheated 350 degree oven for 1 to 1 1/4 hours. Remove the orange slices before serving. Makes 2 servings.
