SIS'S SAUSAGE SPINACH PIE 
1 lb. Italian sweet sausage, chopped
6 eggs
2 (10 oz.) pkgs. frozen chopped spinach, thawed and well drained (very dry)
1 (16 oz.) pkg. Mozzarella, shredded
2/3 c. Ricotta cheese (one 16 ounce container)
1/2 tsp. salt
1/8 tsp. pepper
1/2 tsp. garlic powder
Pie crust for 2 crust pie

Over medium heat cook sausage until well browned. Spoon off fat. Reserve 1 egg yolk. In a bowl combine remaining eggs with sausage, spinach, Mozzarella and Ricotta and spices and set aside.

Roll pie crust to fit 9 inch deep dish pie plate. Spoon mixture into pie plate. Top with pie crust (rolled slightly to fit).

Combine yolk with one tablespoon water and brush over pie. Bake at 375 degrees for 1 hour and 15 minutes or until golden brown. Let stand 10 minutes - cut into wedges. Servings: 10.
