1 c. bean soup mix
1 qt. water
1/2 lb. diced ham or link sausage
1 med. onion, chopped
1 clove garlic, minced
1 can tomatoes, undrained, chopped
1/2 can Rotel tomatoes
Salt, pepper, any other seasonings

Soak beans overnight. Cover with water. Add all ingredients except tomatoes. Cook for 1 1/2 hours. Add tomatoes the last half hour.

NINE BEAN SOUP MIX:

Add nine (or more) of the following:

1 lb:

Black beans

Red Beans

Kidney beans

Pinto beans

Great Northern beans

Navy beans

Lentils

Split peas (yellow and green)

Blackeyed peas

1 box barley pearls.
