ELSA'S CHICKEN SALAD 
4 chicken breasts, around 1 lb.
4 boiled eggs, grated
1/2 c. celery, chopped
1/2 c. sweet salad cubes, drained
1 tsp. salt
1/2 tsp. black pepper
2 tsp. vinegar
Dash of sugar
2 c. mayonnaise

Cook chicken until real tender. After you skin and debone it, just tear it up real fine. Use coarse side of hand grater for eggs. Add eggs to chicken. Then, add celery, salad cubes, salt, pepper, vinegar and sugar. Mix and then add mayonnaise. Mix well. (You may feel this is too much mayonnaise but after it has been in the refrigerator it will be fine.) This recipe will make a little over 2 pounds of salad. You can use turkey or rabbit instead of chicken.
