1 c. cooked beets or canned, diced
Salt and pepper
1 tbsp. lemon juice
1 tsp. prepared mustard
4 tbsp. sour cream

In bowl combine salt and pepper, lemon juice, mustard, and sour cream. Blend well. Add beets. Mix well.
