BEETS AND SOUR CREAM 
5 med. fresh beets
3 tbsp. butter
1/2 tsp. salt
1/8 tsp. pepper
1 c. sliced carrots
1 tbsp. fresh chives
1/2 tsp. dill weed
Sour cream

Bring 3 quarts water to a boil. Add beets. Add butter. Cover and cook 45 minutes with chives, salt, and dill and pepper. Add sour cream when cooled.
