BEETS IN SOUR CREAM 
1/4 c. sour cream
1 tbsp. vinegar
3/4 tsp. sugar
1/2 tsp. salt
1/2 tsp. minced green onion
Dash cayenne
2 1/2 c. hot, drained, cooked or canned beets in quarters

Mix first 6 ingredients; add to beets. Heat slowly, stirring occasionally. When hot, serve immediately. Makes 4-5 servings.
