APPLE TAPIOCA 
1/3 c. quick cooking tapioca
2 c. milk
2 eggs, separated
1/4 tsp. salt
1/3 c. sugar
1 tsp. vanilla
Apples

Add boiling water and salt to tapioca; cook in double boiler until clear. Core and pare apples, arrange whole in buttered baking dish, fill apples with sugar and add tapioca mixture, dot with butter and bake in moderate oven, 350 degrees, until apples are soft. Or, use sliced apples. Serve with sugar and cream.
