DEEP DISH APPLE TAPIOCA & LEMON
SAUCE
 
1/3 c. quick cooking tapioca
1/4 tsp. salt
1/4 c. molasses
2 1/2 c. hot water
2 tbsp. butter
3 tart apples, thinly sliced
1 c. raisins
1/2 c. sugar
1/4 tsp. nutmeg
1/4 tsp. cinnamon

Combine tapioca, salt, molasses and water. Cook over hot water until tapioca is clear, stir frequently. Place apples in well-oiled baking dish. Add raisins. Sprinkle with sugar and spices. Dot with butter. Cover with tapioca mixture. Bake in moderate oven (350 degrees) for 1 hour, or until apples are tender. Serve hot with Lemon Sauce. 6 servings.

LEMON SAUCE:

1 1/2 c. hot water
1 1/2 tbsp. cornstarch
2 tbsp. lemon juice
1/4 c. sugar
1 1/2 tbsp. butter
Grated rind 1/4 lemon

Combine cornstarch and sugar. Add hot water slowly, stirring constantly. Add grated lemon rind. Cook over hot water, stirring constantly, until mixture thickens. Add lemon juice and butter. Serve with baked or steamed puddings, such as Deep Dish Apple Tapioca.
