BANANA NUT CUPCAKES 
1 c. sugar
1/2 c. softened butter (8 tbsp. whipped butter)
1 egg
1 c. mashed bananas (2-3)
1 1/2 c. flour
1 tsp. nutmeg
1 tsp. vanilla
1 tsp. baking soda
1/2 c. nuts

Cream sugar and butter with a mixer. Add egg and beat. Sift flour, soda and nutmeg together and add to creamed mixture and beat. Add nuts, vanilla and mashed bananas; mix well.

Spoon into muffin tins that are lined with baking cups. Bake at 350 degrees for 20-25 minutes. Remove from oven. Sprinkle powdered sugar generously on top of cupcakes.
