CHICKEN - CURRIED SALAD 
3 tbsp. minced onion soaked in 3 tbsp. water
2 tbsp. butter
2 tsp. curry powder
1/3 c. mayonnaise
2 tbsp. shredded coconut
3 c. cooked chicken cut into chunks
1 lg. can (20 oz.) pineapple chunks, drained
1/2 c. slivered almonds
1/2 c. golden raisins
1 red apple, cored, diced, tossed with lemon juice

Melt butter in skillet, add onion mixture and curry. Cook stirring approximately 5 minutes. Let cool, then stir in mayonnaise. Add salt and pepper to taste.

Combine chicken, pineapple, almonds, raisins and apple. Mix with curry/mayonnaise mixture. Put in large bowl and sprinkle with coconut.
