MEXICAN CASSEROLE 
2 lbs. lean ground meat (can use 1 lb. turkey and 1 lb. beef)
2 onions, chopped
6 c. cooked rice
1 can chili
1 can chili with beans
2 tbsp. chili powder
1 lb. sharp cheese, grated (reserve some cheese for topping)
1 sm. bag corn chips, crushed

Brown meat and onions. Place in large mixing bowl and add rice, chili, chili powder and sharp cheese. Mix well and put in large casserole dish. Top with cheese and corn chips. Bake 45 minutes-1 hour. Yield: 10-12 servings.
