BUTTERED NEW LIMA BEANS 
3 c. freshly shelled limas
2 c. boiling water
3 tbsp. butter
Salt & pepper to taste

Wash the beans thoroughly and drop into the boiling water. Cover and simmer until tender, from 20 to 30 minutes, depending on size of beans. Add butter, salt and pepper to taste last 15 minutes of cooking. From 1/2 to 2/3 cup cooking liquid should still remain on beans after cooking. Again check seasoning, then serve immediately.

Makes 5 servings.
