1 lb. ground beef
1 chopped onion, optional
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
4 tomatoes, sliced
1 c. shredded cheese (I use Velveeta)

Heat oven to 400 degrees. Grease pan. Brown meat and onion; drain. Stir in salt and pepper. Spread in pan. Beat milk and baking mix and eggs until smooth. Pour in pan over the meat. Bake 25 minutes. Top with tomatoes and sprinkle cheese on the top of tomatoes. Bake 5-10 minutes longer (until cheese is melted).
