MIDDLE EASTERN GRILLED CHICKEN 
4 chicken breast halves, skinned & boned
1/4 c. lemon juice
2 tbsp. olive oil or other cooking oil
2 tbsp. spicy mustard
1/2 tsp. oregano leaves
1/4 tsp. salt, optional
4 med. onions, cut in halves
1 green pepper, cut into 1" squares

Cut chicken into 1 inch pieces. Combine lemon juice, oil, mustard, oregano and salt; add chicken, stirring until well coated. Cover and refrigerate at least 2 hours.

Arrange on skewers, alternating with onions and green pepper. Grill over hot coals or broil 10-15 minutes, turning occasionally and brushing with marinade. Makes 4 servings.
