BEEF MINESTRONE 
1 clove garlic
2 tbsp. olive oil
1 pkg. frozen mixed vegetables, cooked
1/2 c. celery, sliced
1 zucchini squash, sliced
1 c. cabbage, shredded
1 can kidney, pinto or garbanzo beans
1 can tomatoes
Leftover beef and noodles
Salt
Pepper
Oregano

Sa ute garlic in oil. Mix with vegetables and cook until tender. Add bens, tomatoes and leftover beef and noodles. Add salt, pepper and oregano to taste.
