CHOCOLATE MERINGUE PIE
1 c. sugar
2 tbsp. flour (even)
1 c. sweet milk
3 eggs (4 if small eggs)
1 tsp. vanilla flavoring
4 heaping tbsp. cocoa
1/2 stick butter

Heat oven to 375°F. Mix flour, sugar and cocoa. Add enough hot water to dry ingredients to wet it. Add egg yolks, milk, butter (melted) and flavoring. Pour into uncooked pie crust and cook until firm, approximately 45 minutes.

Meringue:

3 or 4 egg whites
1/4 tsp. cream of tartar
6 tbsp. sugar
1/2 tsp. flavoring

Let egg whites become room temperature while pies are baking with cream of tartar added. Beat whites until stiff in glass bowl. Gradually beat in sugar, little at a time. Beat until stiff and glossy, adding flavoring. Put on pie and bake 8 to 10 minutes until brown.
