QUICK AND EASY CHOCOLATE
MERINGUE PIE
 
Bake 1 deep dish pie shell; set aside. In medium saucepan, mix together:

1 c. sugar
2 heaping tbsp. cocoa
3 tbsp. flour
Pinch of salt
3 egg yolks
1 c. milk

Mix well and cook on low heat until thick then add 1 tsp. vanilla and 2 tbsp. butter; pour into baked pie shell.

MERINGUE: Beat 3 egg whites until soft peaks and gradually add 1/4 cup sugar and beat until forms stiff peaks. Place on top of pie and bake at 425°F until brown.

Refrigerate for at least 2 hours before serving.
