AUNT JOSEPHINE'S JELLY ROLL 
3 egg whites
1 c. sugar less 2 tbsp.
1 tsp. vanilla
3 egg yolks
3 tbsp. water
1 c. cake flour
1 tsp. baking powder
Pinch of salt
Choice of jelly
Powdered sugar

Beat egg whites to a froth. Add sugar a little at a time. Add vanilla and egg yolks, water and dry ingredients. Mix well. Turn batter into a 10 x 15 inch jelly roll pan that has been greased and lined with wax paper and greased again. Bake 15 minutes at 375 degrees or until cake is lightly brown on top.

Have a towel thickly sprinkled with powdered sugar. As soon as cake is removed from oven, invert onto towel. Remove pan, let jelly roll stand for 3 minutes then peel off wax paper. As soon as wax paper is removed roll the jelly roll up in the towel and allow it to cool this way. When cool, unroll and spread with jelly. Roll cake up again and sprinkle with powdered sugar.
