MINTY WITCHES 
2/3 c. shortening
1/2 c. sugar
1 egg
6 oz. pkg. chocolate chips, melted
1/4 c. light corn syrup
1 3/4 c. all purpose flour, sifted
2 tsp. baking soda
Granulated sugar
50 - 60 chocolate covered mints

Combine shortening, sugar and egg in bowl and beat until creamy. Blend in melted chocolate and corn syrup. Sift together flour, soda and stir into chocolate mixture. Chill several hours or overnight is best.

Preheat oven to 350 degrees. Shape dough into balls, the size of a nickel, roll in sugar. Place on ungreased cookie sheet and bake 10 to 15 minutes. DO NOT COOL BUT A FEW SECONDS. Turn one cookie upside down on counter, top with a mint, place a second cookie on mint. As mint starts to melt, carefully press cookies together so the mint forms the filling to the cookie sandwich. Makes approximately 50 to 60 cookies.
