BANANA OATMEAL COOKIES 
1 c. sugar
1 c. shortening
1 egg
1/2 tsp. salt
1/2 tsp. baking soda
3/4 tsp. cinnamon
1 1/2 c. flour
1 c. mashed ripe bananas
1 3/4 c. quick cooked oats
1 tsp. vanilla
1/2 c. chopped nuts

Cream well the sugar, shortening and egg. Sift together salt, soda, cinnamon and flour. Mix dry ingredients with sugar, shortening and egg mixture. Add banana. Next add oatmeal, vanilla and nuts. Bake at 375 degrees for 10-12 minutes. Cookies will be moist.
