HEALTHFUL BANANA-OATMEAL CAKE
RING
 
1 c. corn butter (2 sticks)
Sugar
Flour
Oats - quick or old fashioned, uncooked
1 (8 oz.) container egg substitute, thawed
1 1/4 c. ripe bananas, mashed (2)
2/3 c. buttermilk
1 tsp. baking soda
1 tbsp. baking powder
1 tsp. salt
1 tsp. vanilla
1/4 tsp. cinnamon
1/3 c. walnuts, chopped

Preheat oven 350 degrees. Grease 9 inch tube pan.

On low speed, beat butter and 1 cup sugar, blend on high, beat fluffy. On low, add 1 3/4 cups flour and 1/3 cup oats, beat until crumbly. Spoon 1/2 cup into a bowl and set aside.

To mixture remaining in bowl, add egg substitute, bananas, buttermilk, baking powder, soda, salt, vanilla, cinnamon, 1 cup flour, 1/3 cup oats and 1/4 cup sugar. Beat low until well mixed. On high, beat 2 minutes. Stir in walnuts. Pour into tube pan, sprinkle on the reserved flour mixture. Bake 60-65 minutes. Cool in pan 10 minutes, turn out. Cool completely. 16 servings.
