CHICKEN AND SAUSAGE SAUCE
PIQUANT
 
1 chicken, cut in pieces
1 lb. sausage
2 (8 oz.) cans tomato sauce
1 (6 oz.) can tomato paste
1 onion, chopped
1 clove garlic
1/2 bell pepper, chopped
Parsley
3 tbsp. Lea & Perrin's
3 tbsp. Louisiana hot sauce
3/4 c. barbecue sauce
1 cooking spoon sugar
Water
Season to taste

Brown chicken and sausage, drain grease. Cook onions, bell peppers, parsley, and garlic. Add tomato paste, tomato sauce, Lea & Perrin's hot sauce and barbecue sauce and all other ingredients. Cook for 30 minutes. Add chicken and sausage and water to cover 1/2 inch over chicken and sausage. Simmer for 30 minutes. Add sugar and simmer for 1 hour. Serve over rice.
