EGGPLANT CASSEROLE 
4 c. parboiled eggplant
1 1/2 c. milk
1/2 c. grated American cheese
4 eggs (beaten)
1 1/2 c. cracker crumbs
Salt and pepper
1/2 stick butter

Mix all ingredients gently and bake 20 minutes at 375 degrees in a buttered casserole.
