CRUSTY SWEET POTATO CASSEROLE 
5 med. sweet potatoes, cooked
1 tsp. salt
1/4 tsp. ground mace
1 egg, slightly beaten
1/3 c. crushed pineapple, drained
1/8 tsp. ground ginger
2 tbsp. butter
1/3 c. finely chopped, unsalted peanuts
1/3 c. flaked coconut
2 tbsp. firmly packed brown sugar
1 tbsp. orange juice

Power high. Microwave time: 8 to 10 minutes. Combine cooked sweet potatoes, salt, mace, egg, pineapple, ginger, butter, and orange juice in a 1 1/2 quart glass casserole. Microwave at high for 5 to 6 minutes. Combine peanuts, coconut and brown sugar. Sprinkle over casserole. Microwave at high 3 to 4 minutes. Yield 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
