GLADYS' SWEET POTATO CASSEROLE | |
2 qt. cans sweet potatoes 3/4 c. brown sugar 3/4 tsp. cinnamon 3/4 tsp. nutmeg 1/2 c. butter 3 eggs, slightly beaten 3/4 c. crushed, drained pineapple 1/2 to 1 c. milk 1/2 to 1 c. chopped pecans Thoroughly heat sweet potatoes with liquid, drain. Using hand mixer mash sweet potatoes and add in brown sugar, cinnamon, nutmeg, butter, eggs, pineapple and milk. Turn into a greased 2 quart casserole dish and top with the chopped pecans. Bake at 350 degrees for 45 minutes. |
