SWEET POTATO CASSEROLE 
3 c. mashed sweet potatoes (very lg. can)
1/2 c. sugar
2 eggs, beaten
1/2 tsp. salt
1/2 stick butter, melted
1/2 c. milk
1 1/2 tsp. vanilla
1 can pineapple chunks or tidbits (tidbits are better)

TOPPING:

1/2 c. brown sugar
1/3 c. all-purpose flour
1 c. chopped nuts
1/3 stick butter, melted

Combine sweet potato mixture; spoon into a 1 to 1 1/2 quart casserole. Combine topping, spread over sweet potato mixture. Bake at 350 degrees for 35 minutes.
