AU GRATIN POTATOES 
4 tbsp. butter
4 tbsp. flour
2 c. half & half
8 oz. sharp Cheddar cheese, grated
Salt & white pepper to taste
1 tsp. Angostura bitters
Pinch of nutmeg
6 lg. baked potatoes (cooked & cubed)
Grated Parmesan cheese
Paprika

Melt butter in 2 quart saucepan; add flour and stir over low heat. Gradually add half & half stirring until well blended. Add Cheddar cheese and stir until thoroughly blended. Season with salt, pepper, bitters and nutmeg. Add sauce to potatoes. Put mixture in 2 quart casserole and top with Parmesan cheese and paprika. Bake at 350 degrees until boiling hot and a slight crust forms on top. Makes 8-10 servings.
