ORANGE - NUT CHICKEN SUPREME 
2-3 lb. broiler-fryer, cut up
1 egg, slightly beaten
2 tbsp. grated orange rind
1 tbsp. undiluted concentrated orange juice, thawed
1/2 c. crushed cashew nuts
1/2 c. fine bread crumbs
1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. butter

Combine egg, orange rind, and concentrate; mix well. Let stand 10 minutes. Combine nuts, bread crumbs, salt, and pepper. Dip chicken, first in egg mix, then in nut-crumb mix.

Pour melted butter into shallow baking dish. Add coated chicken pieces. Bake at 350 degrees for 1 1/4 hours or until done. Cover loosely with foil first 45 minutes.
