AUNT FRANNIES BUTTERSCOTCH PIE 
1 (9 inch) baked pie crust
1 c. brown sugar
1 tbsp. butter
2 tbsp. flour
1 egg
1/4 tsp. salt
1 c. milk
1 tsp. vanilla
Optional Cool Whip

Bake 1 (9 inch) pie crust. Cool. In saucepan, add 1 tbsp. butter, 1 cup brown sugar, 1 cup milk, 1 tsp. vanilla; blend until butter is melted in with the above. Add egg mixture; then add salt, 2 tbsp. flour. Mix well on low heat; keep stirring until first sign of boiling; let boil while still stirring for just a few minutes; pour into cooled pie shell. Put in refrigerator for 2 hours. Serve chilled or room temperature. May top with Cool Whip.
