MY MOTHER'S VEGETABLE SOUP 
2 lg. Irish potatoes
1 lg. onion
1 qt. canned tomatoes
1 stick butter

Use amounts in proportion to what you want for total volume.

Cube potatoes and onions. Cover with water, salt to taste and simmer until started to cook. Add tomatoes and butter and cook until potatoes are well done. Makes 4 to 6 soup bowl servings.

Other vegetables may be added. I often add canned green peas and corn for more body.
