APPLE BREAD 
1 c. sugar
1/2 c. shortening
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 c. chopped pared apples (about 4 medium)
1/2 c. chopped nuts (optional)
1/2 c. raisins
1 tsp. sugar
1/4 tsp. ground cinnamon

Heat oven to 350 degrees. Grease and flour 9x5x3 loaf pan. Mix 1 cup sugar, shortening, eggs, and vanilla. Stir in flour, baking powder, baking soda, and salt until smooth. Stir in apples, nuts, and raisins. Spread in pan.

Mix 1 tablespoon sugar and cinnamon. Sprinkle over batter. Bake until wooden pick inserted in center comes out clean (50-60 minutes). Immediately remove from pan. Cool completely before slicing. Store tightly covered. Makes 1 loaf; can be frozen.
